Ingredients

1 pack brown rice meehoon, soaked and blanched
Mint leaves
Hard boiled eggs halved

2 pack kalio sauce
6 red chili, blended with
10 shallots
3liters water
3 stalks lemongrass bruised
4pcs kaffir lime leaves, torn
4 kaffir lime leaves sliced finely
10 taupok cut half
4 pcs taukua cut cubes
250ml thick coconut milk
Salt and sugar to taste

Method

  • heat kalio with blended ingredients for 3 minutes and add in water followed by lemongrass, torn kaffir leaves and both the tofu.
  • Simmer for 20minutes and season to taste. Stir in coconut milk, bring to a quick boil and turn off fire.
  • arrange meehoon and condiments in bowls and serve with the kalio laksa soup.
