HOT SAUCE STEAMED FISH
1 kg whole fish, pomfret, snapper or siakap or 4 small red mullets
1 pack seafood sauce
4 chili padi smashed
2 whole cloves pickles garlic lightly bashed
3 stalks lemongrass bruised
1 small yellow onion, sliced into rings
Sugar and fish sauce to taste
Fresh coriander for garnish
- wash fish, rub with some salt and rinse off.
- set up a steamer and preheat.
- place fish in a shallow dish
- heat up sauce and adjust seasoning with salt and sugar.
- place rest of ingredients below and around the fish pour the sauce over
- steam till just cooked
- serve with garnish of chopped coriander
